It's crocked rice, you pick!

My other half picked number 21. (Thanks, other half!) The twenty first card in the stack was...

"Burgandy and Mushroom Pilaf" (6 quart pot)

~2 T vegetable oil
~2 c long-grain rice
~1 onion, chopped
~1 c sliced cremini mushrooms
~1 zucchini, thinly sliced
~3 1/2 c broth (The card says beef or veggie. I used some of both because I had some opened in the fridge. 1 1/2 c beef. 2 c veggie.)
~1/2 c red cooking wine
~1/4 t pepper
~1/4 c butter, melted

Heat oil in a skillet over medium heat until hot.
Add rice, onion, mushrooms, and zucchini.
Cook and stir for a few minutes until rice is slightly browned and onions are soft.
Transfer mixture to crock pot.
Add broth, wine, salt, and pepper.
Drizzle butter over everything.
Stir once.
Cover and cook on low for 8 hours.

6 servings.


This. Was. Awesome. My other half had to ask me to keep him from having another bowl or two or three. I'm definitely making this more often. I'm sure it'd be great with all sorts of random veggies in it. I could even try making my own "crocked fried rice". Oh, man. The possibilities are endless!
