Sarah doesn't know this, but she also picked tonight's dinner. (Thanks, Sarah!) I was concerned that Safeway wasn't going to have corned beef (it's happened before), so I picked the twelfth card. Twice. The twelfth card the second time was...
"Cheesy Corn and Peppers" (6 quart pot)
~2 lbs frozen corn
~2 T butter, cut into cubes
~1 green bell pepper, seeded and chopped
~1 jalapeno pepper, seeded and finely chopped
~1/2 t ground cumin
~1 t salt
~1/4 t coarsely ground black pepper
~3 oz cream cheese, cut into cubes
~1 c shredded colby jack cheese (The card says sharp cheddar. There was a HUGE sale, so Safeway was out of it. I improvised.)
Coat crock pot with Pam.
Combine all ingredients except cream cheese and colby jack in crock pot.
Cover and cook on high for 2 hours.
Stir in cheeses.
Cover and cook on high for 15 additional minutes or until cheeses melt.
8 servings.
It's corny. It's cheesy. AND it has a kick! So good.
