My other half picked the number one. (Yeah...you did. Go look.) The first card in the stack was...
"Nana's Mini Meatball Soup" (6 quart pot)
~1 lb ground beef
~1 lb ground pork
~1 1/2 c grated Parmesan cheese
~1 c Italian bread crumbs
~2 eggs
~2 T dried parsley (it was supposed to be "a bunch of fresh", but Safeway was out of it.)
~2 boxes of chicken stock
~8 oz fresh spinach
~1/2 box ditalini pasta, cooked
Combine beef, pork, cheese, breadcrumbs, eggs, and parsley in large bowl.
Mix well by hand and roll into 3/4-inch meatballs.
Add meatballs to crock pot.
Cover and cook on low for 9 hours.
Add spinach and cook for 15 additional minutes or until tender.
Add pasta to soup and serve.
8 servings.
I am so happy to have my sense of smell back. This made the house smell amazing all day long and it tasted just as yummy as it smelled. My other half says that he's "souped out" (just like I'm "chilied out"), but that didn't stop him from having 2 bowls of this awesomeness. Go make it. Now. You won't be sad that there will be TON of leftovers. I promise.
