I resolve to...

Angie picked number 42 (Thanks, Angie!). Since there was no 42, I added the digits together and crocked number 6. The sixth number in the stack was...

"Chorizo and Corn Stuffing" (6 quart pot)

~1/2 lb chorizo sausage, removed from casings
~1 (10 3/4 oz) condensed cream of chicken soup, undiluted
~1 (14 oz) can chicken broth
~1 (6 oz) box cornbread stuffing mix
~1 onion, chopped
~1 red bell pepper, chopped
~1 celery stalk, chopped
~3 eggs, lightly beaten
~1 c frozen corn

Lightly spray crock pot with PAM.
Cook chorizo over medium-high heat until browned, stirring frequently to break up meat.
Transfer meat to crock pot using a slotted spoon.
Whisk cream of chicken soup and chicken into drippings in skillet.
Add remaining ingredients and stir until well blended.
Dump into crock pot and stir.
Cover and cook on low for 7 hours (OR on high for 3 1/2 like I did. I had everything ready to go at 10am and then forgot to hit start until about 3:30. Go me?).

6 servings.
I LOVE stuffing (or "dressing" if you're one of THOSE people. If done correctly, it's my favorite thing to eat at Thanksgiving. I've had a million different kinds, but never one with sausage in it. That's likely due to the fact that sausage links had been on my "Eew. Gross." list for the past 30 or so years. This stuffing is awesome. It REALLY makes me want to crock an entire Thanksgiving dinner someday. Is it too late for me to make a new year's resolution?
