Minty fresh?

This was actually something I was supposed to make before we went out of town for Christmas, but I ran out of time because I made the mac and cheese instead. My other half picked "threeve", so this is the fourth card in the stack...

"Spring Pea and Mint Broth Soup" (6 quart pot)

~8 c water
~12 baby carrots, cut into thirds
~2 onions, chopped
~2 leeks, chopped
~1 celery stalks, chopped
~1 bunch fresh mint (I got to use something from my garden! Woot!
~32 oz frozen peas (or fresh peas)
~1 T lemon juice
~salt and pepper
~sour cream

Combine water, carrots, onions, leeks, celery, and mint in crock pot.
Cover and cook on high for 5 hours.
Strain broth and set aside solids. (The card says DISCARD which makes absolutely ZERO sense to me. Why on Earth would you discard them? Especially since the picture of the dish HAS the solids in it!)
Add peas and lemon juice.
Cover and cook on high for 2 hours.
Season with salt and pepper.
Pour solids back into the crock pot and mix.
Ladle into bowls and garnish with a dollop of sour cream.

6 servings.


I was really excited to make this because the bottom of the card reads: "This soup is fun to make. The aroma of fresh mint that fills the house is reason enough to try it." Guess what! I have a nasty cold and no sense of smell at the moment. I had a slight reprieve at some point this afternoon, so I can tell you that it does smell good. Sadly, when it was time to eat it, I had to rely on only my sense of taste. To me, it tasted like peas. My other half says that it was minty, but that it needed something. I suggested more salt and pepper because they were the only spices in it. I might save a serving of the leftovers and eat it when I can smell again. It's gotta be way better than a bowl of peas, right?
