A LONG time ago (in a galaxy far, far away), my other half mentioned wanting a mac & cheese with blue cheese in it, so when I asked him for an idea for something to crock this week, I wasn't surprised that THAT was his answer. During my search for a recipe that fit that requirement (and ONLY that requirement), I found a Buffalo Chicken Macaroni and Cheese recipe. I didn't know such a creature existed! It's not a crock pot recipe, so I had to get creative. I'd crocked mac and cheese a few times, so I knew how to not screw that up. It was the adding buffalo chicken to it part that had me all sorts of nervous. Here's what I did:
"Buffalo Chicken Mac & Cheese" (6 quart pot)
~3 T butter, divided
~4 chicken breasts, cut into bite-sized pieces
~1 onion, chopped
~1 stalk celery, chopped
~2 garlic cloves, chopped
~1 c Frank's hot sauce (I used Xtra hot.)
~2 c UNcooked elbow macaroni
~1 1/2 c milk (I used whole.)
~3/4 lb various cheese ends-cubes or ripped into pieces (Mars had a bunch. Seems it's the ONLY thing that store is good for.)
~1/2 t salt
~1/4 t pepper
~1 c breadcrumbs (I used Panko because the original recipe did and I'd never had them before.)
~1/2 c crumbled blue cheese
Spray crock pot with Pam.
Melt 1 T butter in a large skillet over medium high heat.
Brown chicken long enough that the pink is gone, but don't cook it all the way through.
Set aside.
Add onion, celery, garlic, and hot sauce to skillet.
Cook until veggies are tender.
Add chicken to skillet and toss to coat.
Add mixture to crock pot.
Add macaroni, milk, cheese ends, salt, and pepper to crock pot.
Stir gently to mix.
Melt remaining 2 T butter.
Mix butter, blue cheese, and breadcrumbs in a small bowl.
Add mixture to crock pot and spread it evenly.
Cover and cook on low for 3 hours.
8 servings.
Holy crap, dudes. This. Is. Phenomenal. 99% of our dinner conversation tonight was "Mmm...wow...mmm." It made a TON. Both of us had seconds and we barely made a dent! Fantabulous leftovers for the win!
