I had no meal plan yesterday and my other half was working late, so I decided to clean out our fridge/freezer/pantry and put something together for dinner: something that I could keep on warm for several hours since I had NO idea when he'd be walking in the door. This is what I did:
"Clean Out The Kitchen Stew" (6 quart pot)
~1/2 lb chorizo sausage, removed from casings
~1/2 onion, chopped
~1 (14 oz) can creamed corn
~1 (14 oz) can baked beans, drained
~2 red potatoes, cut into bite-sized pieces
~1 c water
Brown sausage and onion in a skillet over medium-high heat.
Add all ingredients to crock pot.
Mix well.
Cover and cook on low for 6 hours
4 servings.
When he did walk in the door (at 10PM), he said the smell of dinner was making his mouth water. And then we ate some and it was surprisingly delicious. I may have to clean house more often. Wait...what did I just say?
