My other half was working today, so I decided to do another clean out the fridge meal. This time, I had a vague idea about what time he'd be home, so I could make this...
"Clean Out The Fridge Lasagna" (6 quart pot)
~6 UNcooked lasagna noodles
~3/4 of a 24 oz jar Prego Tomato, Onion, and Garlic pasta sauce
~1/2 of a 15 oz container of fat free ricotta cheese
~1 (8 oz) can tomato sauce
~1/2 of a 1 lb bag of fresh spinach leaves
~handful of shredded mozzarella cheese
~handful of shredded cheddar jack cheese
~2 of pizza dipping sauces from Papa John's
~1 c water
Spray stoneware with PAM.
Pour 3/4 of the pasta sauce into crock pot.
Break 3 lasagna noodles to fit bottom of crock pot and place them on top of the sauce.
Spoon half of the ricotta on top of the noodles.
Dump half of the spinach leaves on top of the ricotta.
Pour tomato sauce on top of the spinach leaves.
Place a second layer of noodles on top of the spinach.
Spoon the second half of ricotta on top of the noodles.
Dump the second half of spinach leaves on top of the ricotta.
Pour the last quarter of pasta sauce on top of the spinach leaves.
Sprinkle the mozzarella and cheddar jack on top of the pasta sauce.
Dump the dipping sauces on top of everything.
Add 1 cup water.
Cover and cook for 3 hours.
Serve immediately.
4 servings.
I'm not a huge tomato sauce fan and I'm just STARTING to like ricotta, but I thought this was super yummy. I LOVE that you can crock lasagna.
