"Shredded Beef Soft Tacos" from The $7 a Meal Slow Cooker Cookbook

~3/4 top round steak
~1 onion, chopped
~3 garlic cloves, minced
~1/2 c water
~3/4 c salsa
~2 c torn lettuce (I cut up some avocado instead.)
~1 tomato seeded and chopped
~1/2 c shredded cheddar
~1/2 c sour cream
~4 10-inch flour tortillas (Ours were burrito-sized, technically.)

Place beef, onion and garlic in crock pot.
Pour water over all.
Cover and cook on low for 8-10 hours. (Ours crocked for 10.)
Remove meat and veggies and shred with fork.
In a large bowl, Combine mixture with salsa.
In a separate bowl combine cheese and sour cream
Soften tortillas by wrapping them in microwave save towels and cooking 2-3 minutes. (Ours were soft, so I just nuked them for 30 seconds to warm them up a bit.)
Place 1/4 c beef filling on flour tortilla and top with lettuce (or avocado), tomato, and sour cream mixture.
Serve immediately.

4 servings.
We LOVE Mexican food, so it'd be a surprise if we didn't like this. Adding the salsa at the end (as per the recipe) cooled down the meat, so it wasn't the hottest meal, temperature-wise. I'm pretty sure this was the first crocked meal that didn't burn off our taste buds. Maybe I just didn't serve it "immediately" enough. I mean...I did waste those 30 seconds using our microwave. I can't imagine how cold it'd been if I'd actually done it for the 2-3 minutes I was supposed to.)
