"Ginger Squash" from Better Crocker's Slow Cooker Cookbook (6 quart pot)

~2 acorn squash
~1/4 c water
~1/4 c brown sugar
~1/4 c butter
~3 T apple juice
~1 1/2 t ground ginger
~1/4 t salt
~red apples, chopped
~toasted walnuts, chopped

Cut squash crosswise in half removing seeds and membranes.
Pour water in to crock pot.
Place squash cut size up in crock pot (You may have to stack them if you have a smaller pot.
Mix remaining ingredients and spoon into squash.
Cover and cook on high 4 hours.

4 servings.
My other half said that this meal wins for best presentation AND that he was excited to take the leftovers to work tomorrow. I'll count that as a win! The recipe said that the apples and walnuts were optional, but I'm SUPER glad I decided to put them in it. It's AMAZING. Make it. Tomorrow. Ok? You'll thank me.
