Orange-cha inspired?

This week is "Orange Week"! Everything this week is going to have the word "orange" in its title. Why orange? Why not? Actually, I was going to do a different color, but something inspired me to do orange. So there.

"Spicy Chipotle-Orange Squash" (6 quart pot)

~2lbs acorn squash
~1/4 c water
~3 T brown sugar, packed
~2 T butter
~1 t orange peel
~3 T oj
~1/4 t salt
~1 chipotle chile in adobo sauce, finely chopped

Cut squash in half and remove seeds and membranes.
Pour water into crock pot.
Place squash in crock pot.
In small bowl, mix remaining ingredients and pour into squash halves.
Cover and cook on high for 4 hours.

4 servings
This recipe had been on my make someday list for months, so I was super excited to finally be able to use it. Having never had acorn squash as a kid, I'm enjoying finding recipes that are acorn squash-alicious.

This was really good. It has a little kick to it thanks to the chipotle chile pepper, but if you're a wuss not into that kind of thing, I'm sure leaving it out would be...acceptable.
