Unfortunately for me and my little helper, my other half is on a business trip this week.
Fortunately for you, the crock must go on.
Remember the "Tomato Basil Parmesan Soup" I made last week? Saturday, Karen from 365 Days of Slow Cooking posted to Facebook saying she was looking for volunteers to crock 2 dishes for her March Madness Crock Tourney. 2 dishes during a week I'm without my other half? Sign me up! And so I did.
I asked my friend Molly if she'd be interested in crocking two dishes as well. She would! Do you know what that means?
It's "March Madness" week! Following Karen's rules, Molly and I are each crocking one of the brackets that have made it to her 2nd round of the Tourney. 2 crockers. 4 recipes.
I crocked first.
"Honey Garlic Chicken" (6 quart pot)
HERE is the original.
~1/3 cup honey
~1/3 cup soy sauce
~1/3 cup lemon juice
~4 garlic cloves, minced
~1/4 c flour
~1 T quick-cooking tapioca
~1.5 lbs boneless, skinless chicken thighs
Wash chicken and pat dry.
Dredge the chicken in flour and place in the slow cooker.
Combine honey, soy sauce, lemon juice, garlic and tapioca in a small bowl.
Pour mixture over chicken.
Cover and cook on low for 5 hours.
Serve chicken and sauce over brown rice.
4 servings.
You know when you're at the mall and you find yourself wandering through the food court and there's a guy giving out free samples of Bourbon Chicken from the Asian Bistro. This chicken tastes EXACTLY like that chicken. It's sweet. It's tangy. It makes you want some more Bourbon Chicken. Even my little helper couldn't stop eating it. Had I known THAT, I would've thrown in a few more thighs so I could have leftovers for the rest of the week.
