I crocked the other recipe in my bracket today.

First, I made the dressing:
"Tomatillo Creamy Cafe Rio Dressing"
~1 (1 oz) package Hidden Valley Buttermilk Ranch mix
~1 cup buttermilk
~1 cup mayonnaise (I used chipotle mayo because we had nearly a cup of it left.)
~2 tomatillos, skinned
~1 clove garlic, minced
~1/2 bunch cilantro, chopped
~1/2 tsp lime juice
~1 small jalapeno, seeds removed
Blend all ingredients. (I used our Magic Bullet. The large canister was JUST large enough to make the entire batch. It's like it was made to make this dressing. Or something.)
Taste it and say, "This is AWESOME. I want to drink it."
Don't drink it.
Stick it in the refrigerator.
"Cafe Rio Shredded Beef Salad" (6 quart pot)
~2 lbs chuck roast
~1 onion, quartered
~1 c beef broth
~1 T cumin
~5 garlic cloves, minced
~1 (8 oz can) tomato sauce
~1 (14 oz can) green enchilada sauce
~1 T tomato paste
~cilantro
~avocado
~lime
~lettuce
Place onion in crock pot.
Place beef on top.
Mix broth, cumin, garlic, and tomato sauce in small bowl.
Pour mixture over beef.
Cover and cook on low for 8 hours.
Remove meat from crock pot and shred with 2 forks.
Strain juices from crock pot reserving juice and discarding veggies.
Place shredded beef into crock pot.
Add enchilada sauce and tomato paste.
Serve over salad.
Drizzle with dressing.
Serve with cilantro, avocado, and lime.
8 servings.
Of the two recipes in my bracket, this was the one I was looking forward to the most. AND it didn't disappoint! The shredded beef is slathered in green sauce and we know by now that I am a HUGE fan of tomatillos. My taste buds did a happy dance. I'm drooling just thinking about it. The minor change in the mayo made the dressing spicier than it was supposed to be which, of course, I am a HUGE fan of, too. I could just eat this meal all day long. It's so good. My little helper shared my avocado with me. (Here, shared means I took a picture of it and then he ate the entire thing.)
