I wasn't going to crock today, but I figured my other half might like to come home to a crocked meal after being stuck in a crappy hotel and eating crappy food all week. Also, some friends of ours were coming over and it's always fun to volunteer people to eat your food. I had no plan, so it was another one of my infamous clean out the fridge/freezer/pantry meals.
"Clean Out The Kitchen Green Chicken" (6 quart pot)
~6 boneless, skinless chicken thighs
~1 (14 oz) can green enchilada sauce
~1 chipotle pepper in adobo sauce, finely chopped
~1 green pepper, sliced
~6 oz cherry tomatoes, halved
~brown rice, cooked
~Tomatillo Creamy Cafe Rio Dressing (I ate all of the leftovers from the week EXCEPT for this dressing. I decided to add some to this so my other half could see how AWESOME it is.)
Add chicken to crock pot.
Mix enchilada sauce, peppers, and tomatoes in a small bowl.
Pour mixture over chicken.
Cover and cook on low for 6 hours.
Serve over rice.
Top with some leftover "Tomatillo Creamy Cafe Rio Dressing".

Everyone devoured this, so I'm pretty sure it can go in the win column. Even my little helper couldn't get enough of the chicken.
