Watch your step.

If you know me at all (or probably even if you don't), you know that I HAD to make this. AND that I was really looking forward to the results.

"Chipotle's Beef Barbacoa" (6 quart pot)

~3 lbs beef roast, all fat trimmed
~5 cloves garlic
~1 small onion
~1 T lime juice
~3 chiptoles in adobo sauce
~1 T ground cumin
~1 T ground oregano
~1/2 t ground cloves
~salt and pepper
~3 bay leaves
~1 tsp oil
~1 c water
~rice with cilantro (it wasn't in the original recipe, but it's CHIPOTLE!)

Place garlic, onion, lime juice, cumin, oregano, chiptole peppers, and cloves in a blender and puree.
Trim all fat off meat, cut into 4 inch chunks.
Season meat with salt and pepper and brown on high heat in 1 tsp oil.
Add liquefied spices, water, bay leaves to crock pot.
Cover and cook on low for at least 4 hours. (I crocked mine for 6.)
Discard bay leaves.
Remove beef from crock pot and try to shred with 2 forks.
Make a big fat sad face because it. just. won't. shred.
Pout because you don't know what you did wrong.
Chop beef into bite-sized pieces.
Place beef back in crock pot and toss in liquid.
Serve over rice with cilantro.

See the original recipe? It says "If you are making this in a regular pot...add more water from time to time to make sure it doesn't dry out." I didn't do this. Why? It says REGULAR pot, not crock pot. I thought it meant stove top. Was I wrong? Maybe. Adding water while crocking is insane, right? Perhaps it's necessary for this recipe? Did I buy the wrong cut of beef? Notice how decidedly non shredded the beef is? It was like a steak. I couldn't shred it. I tried. My other half tried. It just sat on the cutting board looking at us all steak-like. I NEED to try this again. The flavor was there, but it wasn't right. At least, not according to my other half. Honestly, I wouldn't know for sure. I usually get the chicken. Or the steak. And no, this wasn't close to the steak, either. Blarg.
