Weight a second.

Last week was popular, so I decided to keep on going. It's "Weight Watchers Week II".

"Chicken Stew" (6 quart pot)

The original recipe is HERE.

~6 skinless, boneless chicken breast halves, cut into 1-inch pieces
~2 c cut up red potatoes, cut into 1-inch pieces (Safeway was out of Yukon.)
~2 c baby carrots
~2 ribs of celery, sliced
~2 (10 3/4 oz) cream of chicken soup (Thanks, Freecycle!)
~1 cup water
~1 tsp dried thyme leaves, crushed
~1/4 tsp ground black pepper
~2 c Bisquick
~2/3 c milk

Add chicken, potatoes, carrots, and celery to crock pot.
In a medium bowl, stir together soup, water, thyme, and black pepper.
Pour mixture over chicken and vegetables.
Cover and cook on low for 7 hours.
In a medium bowl, mix Bisquick and water.
Drop the batter by spoonfuls onto the chicken mixture.
Turn crock pot to high.
Vent lid and cook for 30 minutes or until the biscuits are cooked in the center. (Mine took an hour.)

8 servings.
This was really good. Are we surprised? Honestly, I don't know what algorithm Weight Watchers uses for their point system, but I was shocked to find this on the Weight Watchers website. Cream soup? Potatoes? AND Biscuits? I don't even know if 8 points is a lot. Maybe I should've looking into that. Or something.
