"Chicken Cordon Bleu" (6 quart pot)
~4 chicken breasts
~4 slices of mozzarella
~4 slices of deli ham
~2 garlic cloves, minced
~1 shallot, minced
~1/4 c butter
~1/4 c flour
~1 c milk
~3/4 c water
~1/2 c Italian breadcrumbs
Roll ham and cheese inside each chicken breast and secure with a toothpick.
Place chicken in greased crock pot.
Mix garlic, shallot, butter, flour, milk, and water in a small bowl.
Pour mixture over chicken.
Sprinkle breadcrumbs on top.
Cover and cook on low for 8 hours.
4 servings.
I was a little nervous about this recipe. I THOUGHT we had one last can of cream of something soup in the pantry. I thought wrong. I remembered seeing this DIY cream of something soup alternative on Pinterest, so I decided to try it. Half way through putting it together, I realized I didn't have any broth. or an onion. Or a "main" ingredient. I ended up subbing water for the broth, a shallot for the onion, and leaving out the "main" ingredient.
It. Was. Awesome. This is how chicken should be cooked. So tender. So moist. Absolutely delicious.
