While perusing Safeway's clearance bin a couple of weeks ago, I stumbled upon some ground bison that was 75% off. It was just too cheap to NOT buy, so I decided to pretend it was ground beef and whip together something fun. I'd had bison (in burger form) once before, but it was still slightly out of my comfort zone.
I'd planned to make this to go back to my roots and "celebrate" Columbus Day (HA!), but I forgot. Oops.
What fun things are in Brad's pantry? Day 31.
~1 lb ground bison, browned and drained (I bought this. Obviously.)
~1 c frozen sweet corn kernels (There was no expiration date, but they looked old/freezer burned.)
~1 15 oz can diced tomatoes (I bought this, too.)
~2 potatoes cut into bite-sized pieces (And these.)
~1 chipotle pepper in adobo sauce, diced
~1 t seasoned salt (Expired in 2006.)
~1/4 t red pepper flakes
Add all ingredients to crock pot.
Mix well.
Cover and cook on low for 6 hours.
4 servings.
This was pretty darn good. The only one who wasn't a fan was my little helper. Boo.
