Capers scare me because I have no idea what they are. And yes, I looked it up. It didn't help much. Also, thanks to the merging of Brad's pantry and ours, there were (until today) 3 bottles of lemon juice in the fridge AND 3 bottles of lime juice. That's a lot of citrus.
What fun things are in Brad's pantry? Day 30.
~3 boneless, skinless chicken breasts (I bought these.)
~3 oz capers, drained and rinsed (There's no expiration date, so who knows how long they've been here!)
~1 c lemon juice (I used the rest of a large bottle that expired in 2010.)
~3/4 c extra virgin olive oil
~1/2 c water
~1 t Grill Mates Montreal Chicken seasoning (Expired in 2011.)
~8 oz fresh sliced mushrooms (I bought these, too.)
~smashed potatoes (I bought potatoes, nuked them, and then smashed them.)
Add chicken to crock pot.
Pour capers on top.
Pour lemon juice, olive oil, and water on top.
Sprinkle seasoning on top of chicken.
Dump mushrooms on top. (I'd forgotten about these and ended up deciding to put them in at about an hour into the cooking time. I'm sure it didn't change anything.)
Serve with smashed potatoes
3 servings.
This was super yummy. (Go me!) My other half has decided that he really digs capers, so I guess I have to stop being afraid to use them and make more tasty crocks like this. Right? Right.
