Redemption.

I needed to make something good today. Just. Because.

What fun things are in Brad's pantry? Day 29.

~2 lbs pork shoulder roast (I bought this.)
~16 oz baby carrots (These, too.)
~6 oz fresh cranberries (Yup.)
~2 c veggie broth (And this.)
~2 c brown sugar simple syrup (The last of the big jar that was canned in February.)
~2 chipotle peppers in adobo sauce, diced

Place pork in crock pot.
Surround pork with carrots and cranberries.
Dump in broth and simple syrup.
Place peppers on top of roast.
Cover and cook on low for 8 hours.

4 servings.
THIS! Today's crock was perfectly sweetened. Perfectly spicy. Remember this and how it wasn't quite right? THIS is what I was aiming for! I feel so much better now. You have no idea. Even my little helper loved this. He hasn't willingly eaten baby carrots in a LONG time. So yay for that, too.
