From Brussels with love.

I was going to use the other beet from the CSA today, but I'm pretty sure it went bad. I'm not entirely sure what a bad beet looks like, but this one wasn't pretty. So...I decided to use everyone's favorite veggie instead: Brussels sprouts. We actually like these fun-sized cabbages, so I was excited to finally crock them.

"Brusseley Chicken" (6 quart pot)

~2 large boneless skinless chicken breasts
~3 small white potatoes, cut into small chunks (From the CSA.)
~1 bag of about 20 Brussels sprouts (From the CSA.)
~1 onion, diced (From the CSA.)
~1 chipotle pepper in adobo sauce, diced
~1/2 c pineapple juice
~1/4 t chili powder

Place chicken in crock pot.
Surround chicken with potatoes, Brussels sprouts, and onion.
Top with chipotle pepper.
Pour in pineapple juice.
Sprinkle chili powder on top.

3 servings.
This was really good. Once again, I wasn't sure how everything was going to mesh, but it worked. It had a nice spiciness to it, so if you're not into that kind of thing, I GUESS you can have permission to leave it out.
