Two acorn squash had been staring at me for the last week begging me to crock them. I knew exactly what I was going to do with them, too. Of course, "exactly" here actually means vaguely. I'd crocked acorn squash twice before, so I knew "exactly" what I was doing. I knew acorn squash and cranberries were going to be involved, but that's pretty much it. This little gem is what I came up with:
"Cranberries Stuffed Acorn Squash" (6 quart pot)
~1/4 c water
~2 acorn squash, halved with seeds and membranes removed (From the CSA.)
~1 c fresh cranberries
~1 c apple juice
~2 T butter, melted
~3 T brown sugar
~1/4 t nutmeg
~1/4 t cinnamon
Pour water into crock pot.
Place squash in crock pot, innards upward
Mix remaining ingredients in a small bowl.
Spoon mixture into squash.
Cover and cook on HIGH for 4 hours.
4 servings.
Oh. My. Goodness. Go make this. Now. Mmm... If I had an original crock pot recipe contest to enter right now, I'd totally enter this one. It's that awesome.
