I threw this together in the 2 seconds I had that didn't involve me working today. T'is the season.
"Yet Another Pot Roast" (6 quart pot)
~3 lb chuck roast
~8 red potatoes, quartered (From the CSA.)
~1 onion, sliced (From the CSA.)
~1/4 c red wine (I used a Malbec.)
~1 t dried rosemary
~1 T Sicilian lemon balsamic (THIS. It was part of a Christmas gift last year.)
Add all ingredients to crock pot.
Cover and cook on low for 6 hours.
6 servings.
I served this with sauteed broccoli (also from the CSA.)
This was pretty good. If I'd had more time (maybe 3 seconds), I would've been WAY more creative.
