Tricia gifted me with yet another half (or so) CSA share, so I'm now playing with what amounts to about enough veggies to feed 4 adults for 2 weeks. (Thanks, Tricia!) That's a TON of veggies. So...yesterday, I put together a pork roast and added as much of the fruit and veggies as my pot could handle.
"Fall Pork Shoulder" (6 quart pot)
~3 lb boneless pork shoulder
~1 red apple, chopped (From the CSA.)
~1 turnip, peeled and chopped (From the CSA.)
~1/2 bag cranberries
~1 onion chopped (From the CSA.)
~2 garlic cloves (From the CSA.)
~3 T brown sugar
~1/4 c apple juice
~1/2 t ground ginger
~1/2 t nutmeg
~1/2 t allspice
Add all ingredients to crock pot and mix.
Cover and cook on low for 8 hours.
6 servings.
This was really, really, REALLY good. I had the leftovers for lunch today and I wanted to drink the leftover juices. Mmm...
Sorry about the crappy pictures recently. My camera is SERIOUSLY misbehaving...and if you know me, you know that that is really, really, REALLY bad. I've wanted to throw my laptop across the room more times this week than normal.
