Curry up!

For some reason, I've been craving curry powdery things like Tallahassee craving Twinkies during a zombie invasion.

"Cravin' Curry" (6 quart pot)

~2 boneless, skinless chicken breasts, cut into bite-sized pieces
~1 Fuji apple, cored and chopped (From Panera.)
~1 (6 oz) jar artichoke hearts, drained
~1 (15 oz) can pinto beans, rinsed and drained
~2 garlic cloves, chopped
~1 shallot, chopped
~1 t curry powder
~brown rice, cooked

Add all ingredients except rice to crock pot.
Mix.
Cover and cook on low for 7 hours.
Serve over rice.

4 servings.
This smelled sooo good and was super yummy. Unfortunately, the chicken was a smidge dry. This COULD've been because my other half got stuck at work and dinner sat on warm for an extra 2 hours or so. Still, it hit the spot and I didn't have to kill any zombies to eat it.
