Happy helper.

Teresa picked number 5. (Thanks Teresa!) Number 5 was...

"Tender Salsa Beef" (6 quart pot)

~1 lb beef stew meat, cut into 3/4 inch cubes (The card said 1.5 lbs, but mine was smaller.)
~2 c salsa (I used Safeway's Southwestern hot.)
~1 T brown sugar
~1 T reduced-sodium soy sauce
~1 garlic clove, minced (From the CSA, of course.)
~4 c brown rice, cooked.

Combine beef, salsa, sugar, soy sauce, and garlic in crock pot.
Cover and cook on low for 9 hours or until meat is tender.
Using a slotted spoon, serve with rice.

4 servings. (8 if you use as much beef as you're supposed to.)
This was REALLY good. Even my little helper liked loved it and he doesn't like anything these days. I'm kind of wishing I'd bought as much beef as I was supposed to...
