"Lime Chicken Tacos" (6 quart pot)

~1 1/2 lbs boneless skinless chicken breasts
~3 T lime juice
~1 T chili powder (I stepped it up a notch and used chipotle chili pepper.)
~1 c frozen corn
~1 c chunky salsa (I used Safeway's hot southwest.)
~6" flour tortillas
~lettuce, shredded cheddar cheese, sour cream

Place chicken in crock pot.
Combine lime juice and chili powder; pour over chicken.
Cover and cook on low for 6 hours or until chicken is tender.
Remove chicken; cool slightly.
Shred meat with 2 forks and return to crock pot; heat through.
Stir in corn and salsa.
Cover and cook on low for 30 minutes or until heated through.
Serve in tortillas with sour cream, cheese, and lettuce if desired.

TACOS! Tacos could be my favorite food. These had an awesome flavor and was perfectly spiced. I've mentioned once or twice (or three thousand times) that we at BornToCrock really dig Mexican food and all things spicy, so keep that in mind. I could eat tacos every single day and not complain about it. Nomnomnom.
