Tropical chickens.

My other half picked 3. (Thanks G!) Number 3 was...

"Tropical BBQ Chicken" (6 quart pot)

~6 chicken quarters, skin removed (I used only 3 because I didn't want to drown in leftovers. Not even if they were yummy leftovers.)
~3/4 c ketchup
~1/2 c oj
~1/4 c packed brown sugar
~1/4 c red wine vinegar
~1/4 c olive oil
~4 t fresh parsley, minced
~2 t Worcestershire sauce
~1 t garlic salt
~1/2 t pepper
~2 T plus 2 t cornstarch*
~1/4 c water*

With a sharp knife, cut leg quarters at the joints.
Place chicken in crock pot.
In a small bowl, combine ketchup, oj, sugar, vinegar, oil, parsley, Worcestershire sauce, garlic salt, and pepper; pour over chicken.
Cover and cook on low for 6 hours or until meat is tender.
Remove chicken and serve.
*The card said to skim the fat from the cooking juices. Transfer 2 c to a small sauce pan. Bring to boil. Combine cornstarch and water until smooth. Gradually stir into the pan. Bring to boil; cook and stir for 2 minutes or until thickened. Serve with chicken. I didn't do this because I was too hungry and wasn't paying attention.

I served it with sautéed spinach from the CSA.

Bbq chicken. Crocked. Yeah. It's good. Even with my minor adjustments. Yum. I'm not sure what makes this "tropical", but I do know that I could use some tropical weather (and scenery) right about now. Who's with me?
