"Slow-Cooked Shredded Pork" (6 quart pot)
~1 (2-3lbs) whole pork loin roast (Mine was just shy of 2.)
~1 onion, thinly sliced
~1 c beer (I used Hop3 Heavy Seas Loose Cannon.)
~1 c chili sauce
~2 T brown sugar
~1 T prepared horseradish
~sandwich rolls, split
Place roast in crock pot.
Top with onion.
Combine beer, chili sauce,sugar, and horseradish; pour over pork and onion.
Cover and cook on low for 6 hours.
Remove pork; shred with two forks.
Return meat to cooking juices; heat through.
Use slotted spoon to serve on rolls.
8 servings.
I ALMOST didn't make this. In fact, I ALMOST threw the card in the trash. Horseradish is one of my least favorite things on the entire planet. Despite this, I decided to put a bottle of it in my shopping cart. And pay for it. And take it home with me. And put it in my crock pot with a bunch of other ingredients. And then eat it.
I didn't die. I didn't gag (other than when I took a whiff of the bottle). I didn't make a weird (er than usual) face. I liked it. It wasn't my favorite shredded pork recipe, but it was tasty. Now...what in the world do I do with the rest of the bottle of horseradish?
