"Clean Out The Kitchen Spicy Chicken" (6 quart pot)
~1 t olive oil
~1/2 large onion, chopped (From the CSA.)
~2 jalapeño peppers, cored, seeded, and diced (We came across a TON of free jalapeños. Anyone local need any?)
~2 garlic cloves, minced (From the CSA.)
~3 boneless, skinless chicken breasts, cut into bite-sized pieces
~1 c salsa verde (I used Safeway's.)
~1 t grated lemon peel
~brown rice, cooked
Sauté onion, pepper, and cloves in oil in a small pan.
Add chicken to crock pot.
Pour mixture over chicken.
Pour salsa over chicken.
Sprinkle lemon peel over everything.
Cover and cook on low for 7 hours.
Serve over rice. (I also served it with some sautéed spinach from the CSA.)
4 servings.
Mmm...green sauce. Tender spicy chicken. I should've made more!
