Picking favorites.

We have only 5 cards left, so instead of picking numbers, I'm just crocking them in whatever order I feel like crocking them.

The 5th from the last card was...

"Healthy Slow-Cooked Meat Loaf" (6 quart pot)

~1 c soft breadcrumbs (I don't know what that means. I used Panko.)
~1 1/2 c spaghetti sauce, divided (I used a garden veggie.)
~1 egg, lightly beaten
~2 T dried minced onion
~1 t salt
~1/2 t garlic powder
~1/2 t Italian seasoning
~1/4 t pepper
~2 lbs lean ground beef (The card said 90%. I used 97%)

Cut four 20-inch x 3-inch strips of aluminum foil; crisscross so they resemble spokes of a wheel.
Place strips on the bottom and up the sides of the crock pot.
Spray strips with cooking spray.
In a large bowl, combine all ingredients and mix well. (The directions were actually way more complicated than this. I improvised.)
Shape into loaf; place in the center of the strips.
Cover and cook on low for 4 hours or until meat thermometer reads 160°.
Using foil strips a as handles, remove meat loaf to a platter.
*drizzle with ketchup (because that's how I like my meat loaf.)

(I served it with Brussels sprouts from the CSA.)

8 servings.
This was a really good meat loaf. I've crocked a few and while this one isn't my favorite flavor-wise (THIS ONE still wins), I must say that the actual retrieving it out of the crock pot has been my favorite way so far.  Any future meat loaves will be crocked with the wheel of aluminum foil. I have spoken.
