Fungus among us.

The fourth from the last card was...

"Creamy Swiss Steak" (6 quart pot)

~3/4 c flour
~1 t salt
~1/2 t pepper
~2 lbs boneless beef round, cut into serving size portions
~2 T butter
~1/2 c minced onion
~1 c whole mushrooms* (This wasn't in the recipe. I added them because I had some from the CSA and they were begging me to crock them.)
~2 (10 3/4 oz) cans condensed cream of mushroom soup, undiluted (I used a low sodium one.)
~1 c water
~hot cooked noodles

In a large resealable plastic bag, combine flour, salt, and pepper.
Add beef, a few pieces at a time, and shake to coat.
In a large skillet, brown beef in butter on both sides.
Transfer to crock pot.
Add onions and mushrooms.
Mix soup and water in a small bowl and pour mixture over beef and veggies,
Cover and cook on low for 10 hours.
Serve over noodles.

(I served this with a random mixture of sautéed veggies...kohlrabi, carrots, and peppers.)

8 servings.
This was really good. Nice and tender and mmm....adding the mushrooms was DEFINITELY a good choice.
