Freakcycle.

I like free things. (Who doesn't?)  Freecycle is one of my best friends. I get all sorts of crazy things from the group. Perhaps the craziest so far though, is the ancient chest freezer we snagged so my other half can try to convert it to a kegerator. AND that's not the crazy part! Part of the deal was that it came with SEVERAL large bags of frozen jalapeño peppers that the old Freecycling man grew in his garden last summer. Weird, right? So...we have lots of jalapeño peppers to use. LOTS.

"Clean Out The Kitchen Spicy Beef" (6 quart pot)

~1 lb stew beef cubes
~1 bunch frozen chopped spinach (From the CSA.)
~1 c frozen whole mushrooms (From the CSA.)
~2 jalapeño peppers, seeded, cored and minced.
~1 small yellow onion, chopped
~1 c Safeway's southwestern hot salsa
~1/4 t salt
~1/4 t pepper
~arborio rice, cooked

Mix beef, spinach, mushrooms, onion, salsa, salt, and pepper to crock pot.
Cover and cook on low for 5 hours.
Serve over rice.

4 servings.
Sure, it looks like vomit, but it definitely doesn't taste like it. It had a nice flavor and just the right amount of spice. Yum. Go me. Only about 100 more jalapeños to go!
