I can see the light at the end of the freezer!
"Clean Out The Kitchen Chicken" (6 quart pot)
~3 boneless, skinless chicken thighs (Hiding in the freezer since who knows when...)
~1 small sweet potato, diced (From the CSA.)
~1 (15 oz) can dark red kidney beans, rinsed and drained
~1 (15 oz) can diced tomatoes
~1 t chipotle chili powder
~1 t Louisiana hot sauce
~dash salt
~dash pepper
Add all ingredients to crock pot and mix.
Cover and cook on low for 6 hours.
I served it with a side salad.
3 servings.
I couldn't eat my chicken. It was bad. Freezer burned or something. I'm not ill today, so I'm assuming the chicken hadn't gone bad before I froze it. My other half's serving was perfectly fine. The subtle spice and smokiness of it all was really good. I think I need a do-over...or something.
