Back in the habit.

We're home! My other half requested a buffalo chicken salad for dinner tonight. I based this one off of the wrap/salad I did a few crocks ago. We had most of the ingredients in the house already...the only thing missing was the chicken. I'll be back to crocking things friends have sent me tomorrow.

"Buffalo Chicken Salad" (6 quart pot)

~2 boneless, skinless chicken breasts
~1 c chicken broth
~1 c water
~1 1/2 c Frank's Buffalo Hot Sauce, divided
~2 garlic cloves, chopped
~1 small onion, chopped
~romaine lettuce, chopped (From the CSA.)
~croutons and blue cheese dressing

Place chicken in crock pot.
Add broth, water, 3/4 c Frank's (it was all that was left in the one of the open bottles we had.), garlic, and onion.
Cover and cook on HIGH for 4 hours.
Remove chicken and shred with 2 forks.
Place shredded chicken back into crock pot.
Add 3/4 c Franks. (It was all that was left in the SECOND open bottle we had.)
Stir and let sit for a minute or so.
Remove chicken with a slotted spoon and make your salad.

4 servings.
