"Sweet and Sour Chicken" (6 quart pot.)
~1 lb boneless, skinless chicken breast
~5.5 oz sweet and sour sauce
~1/4 t onion powder
~1/4 t garlic powder
~8 oz pineapple chunks (mine were technically tidbits), drained with 1/4 c juice reserved
~1 T brown sugar
~1 c fresh broccoli*
~red leaf lettuce *
*The recipe said 16 oz of frozen stir fry veggies. I improvised with some CSA veggies.
Add chicken to crock pot.
Sprinkle onion powder and garlic powder on top and mix.
Add sweet and sour sauce, pineapple, pineapple juice, and brown sugar to crock pot and mix.
Cover and cook on low for 4 hours.
During the last half hour of cooking time, add the broccoli.
Serve over chopped lettuce.
4 servings.
I thought this was really good. My other half didn't think it was "saucy" enough. My little helper tasted it, but didn't eat more than one piece of chicken. I just CANNOT please everyone in this house. Boo.
