"Smoky Pulled Pork Tacos with Cherry Peach Salsa" (6 quart pot) The original recipe is HERE.
~2 lbs pork shoulder (It was the biggest/only one Safeway had.)
~salt
~pepper
~1 large onion
~4 chipotle peppers in adobo, plus 2 T adobo sauce
~1/2 c bbq sauce (I used Bullseye's Hickory Smoke.)
~2 T brown sugar
~20 oz Coke (I thought we had a few cans of Dr. Pepper leftover from the housewarming party. I was wrong, so I improvised and used some leftover Coke instead.)
~soft taco sized flour tortillas
~taco toppings (I had some shredded Mexican blend and sour cream in the fridge, so...)

Cut onion into eights and arrange at the bottom of the crock pot. (It said quarters, but my other half has a thing about big chunks of onion, so I made them smaller.)
Cut pork into three chunks. (Since my pork shoulder was smaller, I cut it into fewer chunks.)
Liberally season pork with salt and pepper.
Place pork in crock pot.
Add peppers, adobo sauce, bbq sauce, brown sugar, and coke on top of pork.
Cover and cook on low for 8 hours.
Remove pork using a slotted spoon. (I don't have cheesecloth.)
The salsa part:
~1 c chopped cherries
~1 peach, chopped
~1/4 c fresh cilantro, chopped
~1 jalapeƱo pepper, seeded and minced
~salt
~juice of a lime
Combine all ingredients in a bowl and mix well.
4 servings.
This. Was. Awesome. Sweet. Spicy. Awesome. My other half doesn't even like cherries and he thought that it was delicious. My little helper would touch it. Make this. Now. You're welcome.
