"Happy birthday, daddy!"

Today is my other half's birthday. He had no special requests (other than a Costco birthday cake-Thanks again Tricia!), so I just whipped together yet another recipe someone sent me way back when. And then sorta kinda accidentally made it my own.

"Coconut Curry Chicken" (6 quart pot)

~2 lbs boneless, skinless chicken thighs (I didn't cube them.)
~2 c baby carrots (leftover from the veggie tray at our housewarming party.)
~1 onion, chopped
~1 bell pepper, chopped (Mine was yellow.)
~1 (5 oz) can tomato paste
~1 (14 oz) can coconut milk
~ 1 1/2 t salt
~1 T curry powder
~1 T garam masala
~1 jalapeƱo pepper, seeded and minced
~rice, cooked
I forgot that I was supposed to add cornstarch and water at the end.

Grease crock pot.
Add all ingredients (minus the rice) to crock pot and mix well.
Cover and cook on low for 6 hours.
Serve over rice

(I served it with steamed asparagus and mushrooms because that's what the birthday boy wanted.)

6 servings.
Delicious. The birthday boy approved. I approved. My little helper wouldn't touch it. (He's lucky he's so damn cute!)
