It's another e-book recipe. This is "chapter 5".
"Savory Lemon Garlic Chicken" (6 quart pot)
~8 boneless, skinless chicken breasts
~10 garlic cloves, chopped
~1 onion, chopped (The recipe said 2, but I decided that one was plenty.)
~2 c chicken broth
~1/4 c lemon pepper seasoning
~4 T paprika
~2 t dried parsley (Because I didn't have 2 T fresh.)
~1 T salt
~1 t lemon zest
Rinse chicken and pat dry.
In a small bowl, combine lemon pepper, paprika, and salt.
Coat the chicken even;y with the spice mixture.
Place chicken in crock pot and cover with broth, garlic, onions, and parsley.
Sprinkle lemon zest on top.
Cover and cook on low for 4 hours.
8 servings.
I served this with rice and kale (from the CSA.)
The verdict was split on this one. I thought it was okay. My other half thought it was delicious. I'm thinking that the only reason I didn't like it more was because the smell/taste of lemon and pepper together ALWAYS makes me think of fish (because when I actually eat fish, I like it slathered in lemon and pepper)...and I didn't crock fish, I crocked chicken. Darn it!
