How we (casse)role.

This is "Chapter 2" in the E-book.

"Homemade Hamburger Casserole" (6 quart pot)

~1 lb ground beef
~2 c yellow potatoes, chopped (The recipe said sliced, but I JUST noticed that. Oops.)
~1 1/2 c chopped carrots (Again with the sliced.)
~1 c chopped celery
~1 c mushrooms (The recipe said canned, but I had some from our CSA, so I subbed.)
~1/2 c chopped onion
~1 c frozen peas
~1 c frozen corn
~1 (10 oz) can tomato soup
~1/2 c water
~1 t dried parsley
~dash of salt and pepper

Cook meat, onion, mushrooms, and celery in a large skillet until browned.
Place meat mixture, carrots, potatoes, corn, and peas into crock pot and mix well.
Stir in water, tomato soup, parsley, and salt and pepper.
Mix well to incorporate.
Cover and cook on low for 8 hours.

6 servings.
This was really good. It wasn't casserole-y like the name suggests, though. It was more stew-y. These people and the names of their crocks. Sheesh!
