Look, look, look! Something meaty and bbq-y! It MUST be good!
"Barbecued Chicken" (6 quart pot)
~3-4 lbs chicken pieces (I used 1 boneless, skinless chicken breasts and 4 boneless thighs.)
~1 medium onion, sliced
~1 lemon, sliced
~3/4 c coke
~1 bottle bbq sauce (I used Pork Barrel's Original.)
Place chicken in crock pot.
Top with onion and lemon slices.
Combine coke and bbq sauce in a bowl.
Pour mixture over chicken.
Cover and cook on low for 8 hours.
I served this with couscous and sautéed spinach from the CSA.
4-6 servings.
BBQ chicken is one of my favorite things on the planet. I could eat it every single day and not grow tired of it. This one did not disappoint. Yum!
