I LOVE lemon chicken. It's one of my go-to dishes when I'm testing a new Chinese place. Kung Pao first. Then, lemon chicken. Always.
"Lemon Chicken with Gravy" (6 quart pot)
~2 boneless, skinless chicken thighs and 1 HUGE breast. (The recipe said "a whole chicken, cut into pieces", but I improvised.
~1/2 c flour
~1 t salt
~2 T oil
~3 T brown sugar
~1 can frozen lemonade concentrate (We happened to have a 12 oz can in the freezer (Thanks Laura!), so I used it instead. Do 6oz cans even exist?)
~1 T vinegar
~3 T ketchup
~2 T cold water
~2 T cornstarch
~rice, cooked
Combine flour and salt; coat chicken pieces.
Brown chicken on oil and drain,
Place chicken in crock pot.
Stir together brown sugar, lemonade, vinegar, and ketchup.
Pour mixture over chicken.
Cover and cook on low for 8 hours.
Mix cornstarch and water.
Add mixture to crock pot and
Cook uncovered until thickened.
Serve chicken and gravy over rice.
I served this with summer squash from the CSA.
6 servings if you do it right. (Ours was actually more like 4.)
YUM. Lemony delicious. Our new local Chinese place's lemon chicken is week (but their kung pao is fabulous). So...NOW if I'm ever craving lemon chicken, I'll just crock it my damn self. Because I can. Mmm...
