A recipe for Balsamic Chicken is floating around Facebook. Or WAS? 3 different friends of mine shared it (And I swear my mother in law was one of them) last week? last month? and now I can't find it. So...instead of doing THAT recipe, I crocked the first one Google sent me to. Luckily, I somehow had all of the ingredients on hand.
"Balsamic Chicken" (6 quart pot) The original recipe is HERE.
~3 boneless, skinless chicken breasts
~1 (28 oz) can crushed tomatoes
~1 onion, thinly sliced
~4 garlic cloves
~1/2 c balsamic vinegar
~2 T olive oil
~1 t dried oregano
~1 t dried basil
~1 t dried parsley
~1/2 t dried thyme
~salt and pepper
~angel hair pasta, cooked
Pour olive oil into crock pot.
Place chicken breasts in crock pot.
Salt and pepper each breast.
Place onion on top of chicken.
Put in dried spices and garlic cloves.
Pour in vinegar.
Top with tomatoes.
Cover and cook on low for 6 hours.
Serve over pasta.
4 servings.
Mmm. This was really good. My other half says it was "different". A good different because it's not a stew and we haven't had a lot of pasta recently. My little helper tasted it, but he wouldn't have more than one bite...and I had to bribe him to even do that.
His pickiness is driving me to drink. (This sauvignon blanc is delicious!)
