I was compelled to see if I could find the CORRECT Balsamic Chicken recipe from last week and I couldn't stop searching for it until I was successful. (Hooray for OCD!) During my search, I stumbled upon this recipe and decided that it was too easy to not try.
"Sweet Hawaiian Chicken" (6 quart pot)
~2 lbs boneless, skinless chicken thighs (The recipe said tenderloins, but I had thighs, so I used them instead.)
~1 c pineapple juice
~1/2 c brown sugar
~1/3 c soy sauce.
~rice, cooked
Combine chicken, pineapple juice, sugar, and soy sauce in all ingredients in crock pot.
Cover and cook on low for 8 hours.
Serve over rice.
4 servings.
I served this with steamed broccoli and cauliflower from a leftover veggie tray.
This was quite yummy and SOOOOO easy. The hardest part was trying to find pineapple juice at Safeway after a remodel. My little helper played with it and eventually tried it, but then spit it out into my hand. He's lucky he's so adorable.
