Budget Betty.

It's "Budget Betty" week! All of the recipes this week come from the budget/slow cooker section of Betty Crocker's website. 

I picked this because it was different and involved an ingredient I'd never had before.

~1 c uncooked bulgur wheat
~1/2 c dried lentils, sorted and rinsed
~1 t ground cumin
~1/4 t salt
~3 cloves garlic, finely chopped
~1 15 oz can whole kernel corn, drained
~2 (14 oz) cans veggie broth
~2 medium tomatoes, chopped
~1 c crumbled feta 

Combine wheat, lentils, cumin, salt, garlic, corn, and broth in crock pot.
Cover and cook on low for 4 hours.
Add tomatoes and mix.
Increase heat to high.
Cover and cook for 15 minutes.
Top with feta.

(The only change I made was skipping the olives because we don't DO olives. )
6 servings.
I'd never used bulgur wheat before, so I had no idea how this was going to turn out. Luckily, I did know where to find it at Safeway, (Go me!) It turned out to be pretty awesome. I'd stick this in the "if I was a vegetarian, I could totally live off of this" pile.
