May the fourth be with you.

I crocked this yesterday. We had a busy day/night/day/night, so I'm just now getting to sit and review it.  (Naughty food blogger. Shame on me.)

I picked this because I love pomegranates (and crocked beef, of course!). I've never cooked with POM Wonderful, but I'd seen it in the stores and was looking forward to trying it out. I swear I'm turning into the person who buys all of the "weird" stuff nobody else buys. I'm also the weird shopper who knows where almost ANYTHING at Safeway is located. Is tahini "weird"? I've now had to help 2 shoppers find it because the employees didn't know.

"Pomegranate Beef" (6 quart pot)

The original recipe is HERE.

~1 T olive oil
~1 yellow onion, sliced
~1/4 t cinnamon
~1 t herbes de Provence
~1/2 t salt
~3 lbs beef chuck roast
~4 garlic cloves, chopped
~1 (14 oz) can fire-roasted tomatoes (I used a can "with garlic")
~1 c pomegranate juice
~1/4 c balsamic vinegar
~2 T maple syrup
~1/2 c golden raisins
~5 baby potatoes
~green onions

Grease crock pot with olive oil.
Add onion.
Sprinkle spices on all sides of the roast.
Add meat, garlic, tomatoes, pomegranate juice, vinegar, and syrup to crock pot.
Sprinkle raisins on top.
Add potatoes to the pot for fun. (The original recipe suggested serving this over mashed potatoes. Since there was room, I added them to the pot. Voila.)
Cover and cook on low for 8 hours.
Remove potatoes and smash them in a bowl with some green onions.
Serve beef and juices on top of potatoes.

6 servings.
Hey carnivores! Forget what you thought you were going to crock next and make this instead. Not only does it sound amazing, it tastes AMAZING. I had to restrain myself from eating all of it in one sitting. It's absolutely delicious.
