I picked this so we'd have a vegetarian meal this week. And because it sounded really good.
"Sweet Potato Chili" (6 quart pot)

~2 sweet potatoes, cut into 2-inch chunks (The rebel in me didn't skin them first.)
~1 yellow onion, diced
~2 garlic cloves, minced
~1 (15 oz) can kidney beans, rinsed and drained
~1 red bell pepper, seeded and chopped
~1 (14 oz) can diced tomatoes (I used a can with garlic, onion, and green pepper.)
~1 T chili powder
~1 t smoked paprika
(I didn't know that I didn't have chipotle chili powder, so I got creative and added the next 2 ingredients.)
~1/2 t chili powder
~1/2 t cayenne pepper
~1/2 t salt
~1 c water
~1/2 c orange juice
Add all ingredients to crock pot.
Stir to mix.
Cover and cook on low for 8 hours.
4 servings.
This was awesome. Sweet. Spicy. Super flavorful. My other half said that he'd put this in his favorites pile. Can the rest of May be this delicious?
