Some people think crocking meatloaf is weird. "Doesn't it end up crock pot shaped?" It doesn't HAVE to. Besides, it'll taste the same no matter what shape it ends up, right? Right.
There are a zillion and 12 recipes for meatloaf. (I've counted!) My go-to family recipe isn't gluten-free, so I was excited to try this one. It's WAY different from mine.
"Meatloaf" (6 quart pot)
The original recipe is HERE.
~1 lb ground turkey
~1/2 lb ground beef
~1 red bell pepper, chopped
~1/4 c uncooked brown rice
~1 (14.5 oz) can Italian style stewed tomatoes, with juices
~1 T A-1 sauce
~1 envelope onion soup mix
~1 egg
~ketchup
Mix all ingredients (except ketchup) in a large bowl.
Shape into loaf.
Place in crock pot.
OR do what I did and shove it in a 1.5 quart Corningware dish and place THAT into the crock pot.
Slather the top with ketchup.
Cover and cook on low for 8 hours.
Let sit 30 minutes before serving.
6 servings.
This meatloaf is super flavorful and moist. I'm not sure the rice adds anything to it (except for a bit of crunch), so I'd probably skip it next time. Other than that, this was an awesome loaf of meat. I was a kid, my mom sometimes put rice in her recipe and I was never a fan of that, either. I guess I just don't like rice in my meatloaf. I do, however, love slathering it in ketchup and I normally don't DO ketchup.
Weird fact about me: I put ketchup on 2 things and only 2 things: Meatloaf and Philly Cheesesteaks.
