Ah, the Caribbean... Who wants to go with me? (And pay all of my expenses.) Anyone?
"Caribbean Chicken Curry" (6 quart pot)
~1 T curry powder
~1 t allspice
~1/2 t ground cloves
~1/2 t nutmeg
~1/2 t ground ginger
~4 chicken thighs (The recipe called for boneless skinless, but Lauer's didn't have any and they were practically giving away bone-in, skin-on, so I bought a ginormous value pack and skinned them myself.)
~1 t oil
~1 onion, chopped
~2 garlic cloves, chopped
~2 jalapeños, chopped
~1/2 lb red potatoes, cubed
~1/3 c coconut milk
In a medium bowl, mix curry powder, allspice, cloves, nutmeg, and ginger.
Add chicken to bowl and toss to coat evenly.
Saute chicken until it starts to brown.
Add chicken to crock pot.
Heat oil in a skillet.
Sauté onions, garlic, and peppers until fragrant.
Add mixture to crock pot.
Add potatoes and coconut milk to crock pot.
Stir.
Cover and cook on low for 8 hours.
4 servings.
This smells absolutely AMAZING! We both really liked the flavor, but it lost some points because I used bone-in thighs. Boneless would have been so much easier to eat! Someday, I'll stock up on boneless skinless and I won't have this problem. (Maybe if I type this here, I'll actually remember to look at BJ's next time. Maybe. Doubtful, but maybe.)
If you're near a Costco, they sell huge bags (individually wrapped) of boneless skinless chicken thighs for pretty darn cheap. We don't have a BJ's around us, but I imagine that you'd likely find it in the poultry/fresh meat section of your local warehouse store.
ReplyDeleteIt sounds delicious - I usually shy away from similar recipes because they don't only turn up the flavor, but also turn up the heat. This one seems to have a nice balance. Definitely will be making this soon.
