I've decided that rather than have a theme week, I'd have a theme season. Starting today and all summer long, I'll be crocking recipes that are summery. This means recipes that have "summer" in their titles and ones that have exotic travel locations. Like...Jamaica.
"Jamaican Ham" (6 quart pot)
~1 (20 oz) can pineapple tidbits in juice
~2 lbs boneless ham quarter
~1 T ground cloves
~1 t allspice
~1 t ground ginger
Use toothpicks to attach half of the pineapple to the ham.
Pour remaining pineapple, juice, and spices over ham.
Cover and cook on low for 8 hours.
Remove toothpicks and place pineapple in crock pot.
Slice ham.
Stir contents in crock pot.
Toss ham in juices before serving.
(I served it with broccoli and broccoli cheddar rice-a-roni.)
4 servings.
This was yummy AND I managed to squeeze in all of the food groups! My little helper dug it. ALL of it. He even ate the "trees"! What kid does that?
